Tips On Using Your BR-2 Dome Oven & Roaster

The BR-2's Captive Heat Technology(tm) cooks very differently from traditional ovens that you are used to using so your recipes / cooking times / temperatures may need to be adjusted when using the BR-2. 

  1. We generally recommend that the BR-2 be set at a higher temperature than what is normally called for in your recipe or instructions for heating foods. This is due to Karrsen’s Proprietary “Captive Heat Technology”.  Even though you are cooking at a higher temperature, minimal steam escapes during the cooking process keeping your foods moist and tender.  Of course, be sure to monitor during the cooking process so as not to overcook your foods.

  2. As the BR-2 cooks very differently from conventional ovens or roasters that you are used to, for your convenience, we have prepared this handy Table of Cooking Times for meats and poultry.  Please feel free to download it and save for future reference.

  3. If a pan seems too large to fit in the the BR-2 when using the Reversible Cooking Rack, try using the Lid Rest/Trivets instead.  As they are a lower height, they may give you the extra clearance you need to fit your pan in the BR-2.

  4. When cooking a pizza, we recommend placing the pizza directly on the cooking rack at the high setting instead of using the round baking pan for a crispier crust.  You can also bake the pizza a bit longer than you typically do if you prefer an even crispier result.

  5. When cooking steaks in your BR-2, we suggest searing the meat in a pan with grill surface and then finishing in the BR-2 to produce the juiciest, tender meats.

  6. When baking cakes in your BR-2, let the cake cool out of the pan longer than usual before frosting. The BR-2 will bake an incredibly moist cake due to minimal loss of steam/moisture during the cooking process and cakes may be a little more difficult to frost immediately out of the BR-2.

  7. Due to the way the BR-2 works, we do not recommend using glass / pyrex baking pans as the glass tends to absorb too much of the heat and prevent the foods inside the glass pan from cooking properly.

  8. For most even cooking results, food should be centered as much as possible in the BR-2 and should not be allowed to touch the walls of the lid.  If you notice the edges of your food starting to brown too much, you can place some foil around / over these edges to slow down the browning around the outside.

  9. When cooking multiple foods at the same time in the BR-2 (for example chicken breast with potatoes and carrots), please keep in mind that certain foods may take longer to cook than others.  In this case, we suggest to start the foods with longer cooking times (such as potatoes or carrots) cooking in the BR-2 before you add the foods with shorter cooking times.

  10. When roasting a stuffed turkey you may want to place foil over the top, legs, and wings to slow the browning process. Remove foil for the last 20-30mins to ensure a beautifully brown turkey.

Your Karrsen product is warranted to be free of defects in materials and workmanship for a period of 1 year from date of purchase in the United States. Dated proof of purchase required.

Within the warranty period, Karrsen will repair or replace defective parts at no charge with dated proof of purchase.

Shipping charges may apply.  Prior to returning the item, please contact our Customer Service at (877) 598-9981 (7:30am to 4pm PT Monday - Friday) to obtain a Return Authorization Number.

Please allow 2-4 weeks for return shipping.

This warranty does not cover misuse, abuse, neglect or improper applications or use of product. This warranty is void if product is serviced by anyone not authorized by Karrsen.
